Espresso coffee is incredibly sensitive to how the beans are ground.  In Italy a trained Barista could spend 3 years learning the art and much attention focusses on how to set the grinder up properly.  These commercial grinders are powerful paralell wheel burr grinders and aid a cool, but consistent grind.  Ask for details if you are not sure.
